a customer made a appointment with me to clean his hoods, i got there at 500am and he opens at 10.30. oh and he closed at 3.00am so its only been 2 hours that hes been closed. so i get there and everything is still extremly hot there is only a couple of feet between the hoods and the pizza oven. i take out the filters and OMG no lie there is atleast about a 1inch build of sticky rubberized grease thru out the whole hood system. the owner said it hasint been done in around 6years.
i told him for it to be done properly he would need to be shut down for atleast half a day and all pizza ovens and fryers shut off so i could manully lay on top of the ovens and scrape the hoods and up the shute. i have never seen hoods this bad before also i think alot has to do with the little exaust fan he has on top it has 3 blades and there about 5inches long each if that. so hes going to be installing a larger fan unit. so i scheduled the job for 2 weeks away so he could be planned to shut down half the day. did i do the right thing or would have you tryed cleaning it?
