Kitchen Exhuast Cleaning

I swore I would never do a vent hood then I was pleaded with by a really good customer and told what they had been paying. (showed me the past invoices from several corps.) Made my mouth water. Sooooo I called a friend that does do them and he is going to "show me the ropes"...looking for the good the bad the ugly before I do more than just this one.
