Complete Kitchen Equipment Cleaning

I have an offer to clean the kitchens at a restaurant chain. They want the equipment to be cleaned in place during the night hours. This equipment has never been cleaned except for easily accesible top surfaces. Some of the equipment is electronically controlled. Has anyone worked in this type of environment? I would appreciate any advice on method, equipment and chemicals? Thanks.

-- Nights
-- Never cleaned hoods
-- Electronically controlled equipment

I'd hazzard a guess and say most everyone has been in this same situation hundreds of times. That's what most of the jobs consist of.

I would appreciate any advice on method, equipment and chemicals?
Same setup as you would use in the daytime, on a hood that is regurlarly cleaned.

Sounds like you are just getting into the hood cleaning business?
