3 tips. High pressure, high heat, and good chemical. Besides that, make sure you cover everything in plastic, under and around the hood. If they don't have good drains, funnel the water into a trash can or get a good 2 stage vacuum to pick up the water. I have a good vacuum personally. It has a built I sump pump for water removal. That saves the back. Hope that helps. Any questions, just let me know. I've been hood cleaning 10 years now.

is it because some water might filter from the unions??

That is because I think that customer will want a complete servic... not just the canopy or the visible stuff
