If you dont SCUBA dive there is a thing called SNUBA! It is like snorkeling but you can go about 35 feet down witha an air line to a air tank. Only takes a 15 minute lesson that they give you on the boat ride out to the dive site. Lot of fun!
Check it out here:

Use Oahu as your base and take a two (minimum) day trip to Kauai. The garden isle is what everyone thinks of when they think of Hawaii. Oahu is like Downtown Los Angeles or New York etc with a beach and a truckload of tourists!
If you want to give a "brother" a hand up, be honest with him. Don't suger coat or minamalize the importance of doing things correctly.
"Go for it" as advice on taking on a chain account with no KEC experience is about the stupidest thing I have heard.
I am not in fear of my livelyhood, actually everytime someone that does not have a clue about flue cleaning starts up a new business (and there are plenty) that flops it adds to my credibility. Sure I may lose a few customers for a while, but they come back...and I have to charge extra to clean...
Don't forget to get your 2 mil liability insurance policy naming the restaurant as an additionally insured, oh yea make sure the policy is for fire protection not janitorial work.
Good Luck
We lease our equipment with a small residual buyout at the end (typically $1.00).
Consult with your accountant he will give you the best option for your individual situation.
If you want it seperate you need a "C" corp. A "C" corp is a completely seperate entity, no finances, liabilities or credit is shared.
An "S" corp shares your personal finances and therefore also your credit.
I would recommend you spend some time with your accountant to get what you are...
