I've been looking for a comprehensive training course that will help me get up and running.

From what I've read so far Tim Cross specializes in wood restoration.

Delco and Hydotech have 3-6 day courses for about 2k
are either of these worth the investment if so which one has had better reviews?

You won't regret it if you go with Tim Cross. He will teach wood restoration and how to operate your business. He the best and is the largest is the midwest as far as I know.
