Tricking a steamer

I have some cold weather thawing applications for a Steam Jenny I have purchased.

As I understand it, combo units use nozzle size to go from hot water to steam. In fact the water in the wand is 325º water until exposed to atmosphere.
You install the steam tip and then tell the unit you want steam and there you go!

Are there other ways of producing 325º steam in an application where you can exclude the use of the wand?

In my scenario, I'm considering installing a steam valve and temp gage in a tee to create a restriction and then monitoring the temperature to bring it close but not quite 325º.

Is this done?

Does anyone discharge into a chamber and then pull off the chamber?...while draining the condensate back to tank.

As I understand it, all one would need to do is restrict the water flow into the burner chamber but after the flow/pressure switch. The burner still comes on when called for, and has the same amount of btu's, it just has less water to heat thus higher temps.

Hope that helps. Be sure all of the "downstream" componets are rated for the higher temps.
