i think its called TALLOW? aND YES MICKY D'S USED TO COOK FRIES IN TALLOW.
I know that has changed.
Whale puke is also worth more then it's weight in gold, so im told,they use it in purfume making.
Getting back to the subject, i have seen Brians pics of guys that look like they are stuffed into the duct so bad they can hardly move. Do you want the grease to stick like that? Why dont they teflon coat the ducts, seems to work on my fry pan.
There is no aftermarket coating to apply to make them easyer to clean?
I have seen lakes of grease run off a roof and down the building.
We get fire calls and need to check the AC units and WOW. How do you clean that up,speedy dry? That is what the owners use around them. Why dont they build a catch basin around the vent?
They need a air grease seperator but that would not be good for the cleaning guy's.
It prob. comes down to ol $$$$$$ cheaper to hire someone and write it off then build a better mouse trap.
Do you guys to jetting of the sewer/grease traps also. I remodeled a steak house once and we cut a 4 inc pipe PVC it had less then 3/4 of an inc of room to drain, the rest was solid grease. It was nasty,but now i know how my arteries look like. I should eat more veggies.
Im glad there are guy's that do this stuff and that im not one of them. On the other hand year round work would be nice. Maybe i could learn it from a school and just hire guy's for the hands on/in?

Just a thought

I just wanted to say that I have come up with an ingenious way of water and grease capture. I don't use any plastic anymore, and I have very little cleanup. What I have come up with is this. I have a 50 gal barrel with a 10 inch hole cut in the top. I then went a bought a 10 inch steel vent shaft (round) that is 6 ft long, also have bought some other lenghts for specific jobs. On the end of the vent shaft, i attach an aluminum "shoe", or at least that is what I have called it. I have made several of these "shoes" to fit the actual opening of the exhaust shaft opening. I have to cut two openings in the "shoe". So that it will fit over the fire extinguisher tubes that go across the shaft opening. But all in all the set up is rigid so that the air pressure doesn't move it, and all of the grease and water go into the 50 gal barrel. I know this must be hard to understand, but I will see if I can't get some pics of it, so you all can understand it better. But this little setup has saved me a ton of setup time, and clean up time.

Max,

I have seen a similar method like you show and describe. Is this method what you use exclusively on McD's or everywhere? If you don't use any plastic and attach the shoe to the extinguisher piping, how do you properly clean the grease trough and the plenum areas?

In capturing the waste water in containers is fine --Forget the pull ropes and sliding the containers to the drain -- Use a shop Vac with a pump. Put the suction hose in the container and run the sump hose to the drain and WASH AWAY!! Work SMART NOT HARD.

Ok I haven't been on this board in a while so I may be bringing this thread back from the dead. Any way here are my thoughts. Rob, how do you clean the hoods with this method, and also I have found that not many McDonalds ducts are straight, and require spraying up from the bottom to get the entire duct, your method would seem to get in the way of this. I have a picture of how we do it but I can't seem to figure out how to attach a picture here now, so I am including a link to another bb were you can view the pictures. Just trying to understand
